Galangal is also known as Thai ginger or Siamese ginger. Commonly found in Thai, Indonesian and Malaysian cooking.
The skin on galangal is smoother and paler than ginger and its flesh is much harder. Galangal has an earthy, sharp citrussy, almost piney flavour and is best tasted in Thai coconut soup or a Malaysian beef curry.
